  • 1 pound, boneless and skinless chicken breast
  • 8 cups chicken broth
  • 6 cups, chopped kale
  • 1 teaspoon, dried thyme
  • 1 piece bay leaf
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (adjust to taste) black pepper
  • 1 tablespoon (optional) lemon juice

Directions

Step 1

Heat the olive oil in a large soup pot over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, or until softened.

Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Place the chicken breast in the pot and pour the chicken broth over it.
