  • 1 cup white mushrooms, sliced
  • 1 cup artichoke hearts, drained and quartered
  • 0.5 cup dry white wine
  • 0.5 cup chicken stock
  • 0.5 cup heavy cream
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Lightly dredge the chicken breasts in the flour, shaking off any excess.

Step 3

In a large skillet, heat the butter and olive oil over medium heat until the butter is melted and foaming.

Add the chicken breasts to the skillet and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
