Ingredients

  • 500 grams Chicken (bone-in or boneless, cut into pieces)
  • 2 teaspoons Cumin seeds (Jeera)
  • 2 medium Onion (finely chopped)
  • 2 medium Tomatoes (finely chopped)
  • 4 cloves Garlic cloves (minced)
  • 1 teaspoon Ginger (grated)
  • 2 pieces Green chilies (slit, adjust to taste)
  • 0.5 teaspoon Turmeric powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Red chili powder (adjust to taste)
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 3 tablespoons Oil (vegetable or mustard)
  • 2 tablespoons Fresh coriander leaves (chopped, for garnish)
  • 200 milliliters Water

Directions

Step 1

Heat oil in a large pan or skillet over medium heat.

Step 2

Add the cumin seeds and allow them to crackle for about 30 seconds, releasing their aroma.

Step 3

Add the chopped onions and sauté until golden brown, about 5-7 minutes.

Step 4

Stir in the minced garlic, grated ginger, and slit green chilies. Sauté for 1-2 minutes until fragrant.

Step 5

Add the chopped tomatoes and cook until they are soft and the oil starts to separate from the mixture, about 5 minutes.

Step 6

Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook for 1-2 minutes to toast the spices.

Step 7

Add the chicken pieces to the pan and stir well to coat them in the spice mixture.

Step 8

Pour in the water, cover the pan, and let the chicken simmer over medium heat for 20 minutes, stirring occasionally.

Step 9

Once the chicken is cooked and tender, sprinkle garam masala on top and mix well.

Step 10

Garnish with freshly chopped coriander leaves and serve hot with rice, naan, or roti.
