  • 2 teaspoons Cajun seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 4 sheets Aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the chicken breasts into bite-sized pieces and set aside.

Step 3

Cut the andouille sausage into thin rounds. Dice the green bell pepper, yellow onion, and celery stalks. Mince the garlic cloves.

Step 4

In a medium bowl, combine the uncooked rice, chicken broth, diced tomatoes (with their juices), green bell pepper, onion, celery, garlic, olive oil, Cajun seasoning, paprika, dried thyme, salt, and black pepper. Stir well to mix.
