Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 medium Onion, finely chopped
  • 14 ounces Diced tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 0.25 cup Grated Parmesan cheese (optional)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the minced garlic and chopped onion. Sauté for 2-3 minutes until the onions are translucent and garlic is fragrant.

Step 4

Stir in the diced tomatoes (with their juices), tomato paste, and chicken broth. Mix well to combine.

Step 5

Add the dried oregano, dried basil, red pepper flakes, salt, and black pepper. Stir to incorporate the spices.

Step 6

Return the chicken breasts to the skillet, nestling them into the sauce.

Step 7

Reduce the heat to low, cover the skillet, and let the dish simmer for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 8

Garnish the dish with freshly chopped parsley and sprinkle with grated Parmesan cheese if desired before serving.

Step 9

Serve the Chicken Italianio warm with crusty bread, over pasta, or alongside a fresh green salad. Enjoy!
