Ingredients

  • 1.5 kg Chicken thigh and drumsticks
  • 4 tablespoons Lemongrass, minced
  • 0.25 cup Calamansi juice
  • 0.25 cup Coconut vinegar
  • 0.25 cup Soy sauce
  • 6 cloves Garlic, minced
  • 2 tablespoons Ginger, minced
  • 0.25 cup Annatto oil
  • 2 tablespoons Brown sugar
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 4 pieces Bay leaves

Directions

Step 1

In a large mixing bowl, combine minced lemongrass, calamansi juice, coconut vinegar, soy sauce, garlic, ginger, annatto oil, brown sugar, salt, black pepper, and bay leaves. Mix well to make the marinade.

Add the chicken to the marinade, making sure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or, for best results, overnight.
