Ingredients

  • 4 pieces chicken breasts (boneless, skinless)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves (minced)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons fresh thyme (leaves only)
  • 1 cup Parmesan cheese (grated)
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley (chopped, optional for garnish)

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium-low and add the butter to the same skillet. Once melted, add the minced garlic and sauté for 1 minute until fragrant, taking care not to burn the garlic.

Step 4

Pour in the chicken broth, scraping the bottom of the skillet with a wooden spoon to deglaze and loosen any browned bits. Allow the broth to simmer for 2 minutes.

Step 5

Lower the heat and stir in the heavy cream, fresh thyme leaves, and Parmesan cheese. Stir until the cheese melts and the sauce thickens slightly, about 3-4 minutes.

Step 6

Add the lemon juice and stir to combine.

Step 7

Return the chicken breasts to the skillet, spooning the sauce over the top to coat. Let the chicken simmer in the sauce for 5 minutes to absorb the flavors.

Step 8

Garnish with chopped fresh parsley, if desired, and serve warm with your choice of sides such as mashed potatoes, rice, or steamed vegetables.
