  • 1 medium, finely chopped Onion
  • 3 cloves, minced Garlic
  • 1 tablespoon, grated Ginger
  • 0.5 cup Peanut butter (creamy or natural)
  • 2 tablespoons Soy sauce
  • 1 cup Chicken broth
  • 1 cup Coconut milk
  • 1 tablespoon Brown sugar
  • 1 tablespoon Lime juice
  • 0.5 teaspoon (optional, for heat) Crushed red pepper flakes
  • 2 tablespoons, chopped Fresh cilantro
  • 2 tablespoons, for garnish Roasted peanuts

Directions

Step 1

Season chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium heat. Once hot, sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove chicken from the skillet and set aside.
