Ingredients

  • 6 pieces boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium white onion, roughly chopped
  • 3 cloves garlic cloves, minced
  • 1 cup fresh cilantro, chopped
  • 0.5 cup fresh parsley, chopped
  • 1 cup fresh spinach, chopped
  • 1 medium jalapeño, seeded and chopped
  • 1.5 cups chicken broth
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 4 cups cooked white rice or quinoa

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs and sear for 3-4 minutes on each side, until golden brown. Remove from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the chopped onion. Sauté for 3-4 minutes until softened, then add the minced garlic and cook for another 30 seconds until fragrant.

Transfer the cooked onion and garlic to a blender or food processor. Add the cilantro, parsley, spinach, chopped jalapeño, and chicken broth. Blend until smooth.
