Ingredients

  • 500 grams Chicken thighs (boneless, skinless)
  • 100 grams Greek yogurt (thick)
  • 1 tablespoon Ginger-garlic paste
  • 2 pieces Green chilies (finely chopped)
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh cilantro (finely chopped)
  • 2 tablespoons Fresh mint (finely chopped)
  • 1 teaspoon Red chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 6 pieces Skewers (soaked in water for 30 minutes if wooden)
  • 2 tablespoons Butter or ghee (for basting)

Directions

Step 1

Cut the chicken thighs into bite-sized chunks and set aside.

Step 2

In a large mixing bowl, combine Greek yogurt, ginger-garlic paste, chopped green chilies, lemon juice, cilantro, mint, red chili powder, ground cumin, garam masala, and salt. Mix well to form a thick marinade.

Step 3

Add the chicken chunks to the marinade and toss to coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight, for maximum flavor absorption.

Step 4

If using wooden skewers, soak them in water for 30 minutes to prevent burning during cooking.

Step 5

Preheat a grill, grill pan, or oven broiler to medium-high heat. Lightly grease the grill grates or pan with vegetable oil.

Step 6

Thread the marinated chicken pieces onto the skewers, leaving a small gap between each piece to ensure even cooking.

Step 7

Place the skewers on the grill or pan and cook for 10-12 minutes per side, turning occasionally, until the chicken is cooked through and has a slightly charred exterior.

Step 8

Baste the chicken with butter or ghee during cooking to enhance flavor and keep the kebabs moist.

Step 9

Once cooked, remove the skewers from the grill and let them rest for 2-3 minutes before serving.

Step 10

Serve hot with mint chutney, sliced onions, and lemon wedges.
