Ingredients

  • 500 grams Chicken breast
  • 250 grams Greek yogurt
  • 4 units Garlic cloves
  • 3 tablespoons Lemon juice
  • 4 tablespoons Olive oil
  • 2 teaspoons Dried oregano
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 large Cucumber
  • 2 medium Tomato
  • 1 small Red onion
  • 3 tablespoons Fresh parsley
  • 4 units Pita bread
  • 2 tablespoons Fresh dill
  • 1 teaspoon Red wine vinegar
  • 1 teaspoon Ground coriander

Directions

Step 1

In a medium bowl, mix 150 grams of Greek yogurt, 2 minced garlic cloves, 2 tablespoons of lemon juice, 2 tablespoons of olive oil, oregano, cumin, salt, and black pepper to create the chicken marinade.

Step 2

Slice the chicken breasts into thin strips and coat them thoroughly with the marinade. Cover and refrigerate for at least 30 minutes (or up to 3 hours for enhanced flavor).

Step 3

To prepare the tsatsiki, grate half of the cucumber and squeeze out the excess liquid. In a small bowl, combine the grated cucumber, the remaining 100 grams of Greek yogurt, 1 minced garlic clove, 1 tablespoon of lemon juice, dill, salt, and pepper. Mix well and refrigerate to chill.

Step 4

To make the cucumber salsa, dice the remaining half of the cucumber, tomatoes, and red onion. In a medium bowl, mix the diced vegetables with parsley, red wine vinegar, 1 tablespoon of olive oil, and ground coriander. Season with a pinch of salt and pepper.

Step 5

Heat a large skillet or grill pan over medium-high heat. Add a drizzle of olive oil, then cook the marinated chicken strips for 10-12 minutes, turning occasionally, until golden brown and cooked through.

Step 6

Warm the pita bread in the oven or on a skillet for 1-2 minutes to soften.

Step 7

Assemble the chicken gyros by spreading a generous layer of tsatsiki onto the pita bread. Add a portion of cooked chicken strips and top with cucumber salsa.

Step 8

Fold the pita bread into a wrap and serve immediately. Enjoy your homemade chicken gyros with cucumber salsa and tsatsiki!
