  • 1.5 pounds Boneless, skinless chicken thighs
  • 3 tablespoons Olive oil

  • 4 units Garlic cloves, minced

  • 2 teaspoons Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Cucumber
  • 2 tablespoons Fresh dill, chopped
  • 1 tablespoon Fresh mint leaves, chopped
  • 1 medium Red onion, thinly sliced
  • 2 medium Tomatoes, sliced
  • 4 pieces Pita bread

Directions

Step 1

In a large bowl, combine 2 tablespoons of olive oil, lemon juice, 2 minced garlic cloves, 1 teaspoon of oregano, 1 teaspoon of cumin, paprika, salt, and black pepper.

Add the chicken thighs to the marinade, turning to coat well. Cover and refrigerate for at least 1 hour, or overnight for best results.

While the chicken is marinating, make the tzatziki sauce. Grate the cucumber and squeeze out excess water using a clean cloth or paper towel.
