Ingredients

  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 4 oz cans canned green chilies, diced
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp chili powder
  • 3 cups low-sodium chicken broth
  • 2 15 oz cans cannellini beans (white beans), drained and rinsed
  • 2 tbsp fresh lime juice
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 tbsp fresh cilantro, chopped (for garnish)
  • 0 sour cream (optional, for serving)
  • 0 shredded Monterey Jack cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Season the chicken with half the salt and black pepper, and sear it in the pot for 3-4 minutes per side until golden brown. Remove the chicken and set aside.

In the same pot, add the diced onion and cook for 4-5 minutes until softened.

Stir in the minced garlic and cook for 1 minute until fragrant.
