Ingredients

  • 2 pieces (about 6 oz each) Cube steaks (tenderized beef steaks)
  • 0.5 cups All-purpose flour
  • 1 tablespoons Cornstarch
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Onion powder
  • 0.5 teaspoons Paprika
  • 0.5 teaspoons Kosher salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 cups Buttermilk
  • 1 piece Large eggs
  • 0.5 cups Vegetable oil (for frying)
  • 2 tablespoons Unsalted butter
  • 1 cups Milk (for gravy)
  • 2 tablespoons Additional all-purpose flour (for gravy)
  • 0.25 teaspoons Salt (for gravy)
  • 0.25 teaspoons Black pepper (for gravy)

Directions

Step 1

Place the cube steaks on a cutting board and pat them dry with a paper towel. Set aside.

Step 2

In a shallow dish, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, kosher salt, and ground black pepper.

Step 3

In a separate shallow dish, whisk the buttermilk and egg until combined.

Step 4

Dredge each cube steak in the seasoned flour mixture, shaking off the excess. Then dip it into the buttermilk-egg mixture, allowing any excess to drip off. Finally, dredge it again in the seasoned flour mixture, pressing gently to adhere. Set aside on a plate.

Step 5

Heat the vegetable oil in a large skillet over medium heat until shimmering, about 350°F. Add the butter to the oil to enhance the flavor.

Step 6

Carefully place the breaded cube steaks into the skillet. Fry for about 3-4 minutes on each side, or until the outside is crispy and golden brown and the internal temperature reaches at least 145°F. Remove the steaks and place them on a plate lined with paper towels to drain.

Step 7

For the gravy, drain all but about 2 tablespoons of oil from the skillet. Sprinkle the additional flour into the skillet and whisk it constantly over medium heat until the flour is golden and cooked, about 1-2 minutes.

Step 8

Slowly pour in the milk while whisking continuously, ensuring no lumps form. Cook the gravy, whisking frequently, until it thickens, about 3-4 minutes.

Step 9

Season the gravy with salt and pepper to taste.

Step 10

Serve the chicken fried steaks on plates and generously spoon the gravy over the top. Enjoy your Chicken Fried Steak for Two with your favorite sides like mashed potatoes or green beans.
