  • 1 cup All-purpose flour
  • 1 teaspoon Salt

  • 4 large Eggs
  • 0.25 cup Parmesan cheese
  • 4 tablespoons Butter
  • 2 tablespoons Olive oil
  • 1 cup Chicken broth
  • 0.5 cup Dry white wine
  • 0.25 cup Lemon juice
  • 2 tablespoons Fresh parsley
  • 4 slices Lemon slices (optional, for garnish)

Directions

Step 1

Place each chicken breast between two sheets of plastic wrap and use a meat mallet to pound them to an even thickness, about 1/4 inch thick.

Step 2

Season the flour with salt and black pepper in a shallow dish. In another shallow dish, whisk the eggs and Parmesan cheese together until smooth.

Dredge each chicken piece in the seasoned flour, shaking off the excess, and then dip them into the egg mixture, coating them evenly.
