Ingredients

  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 pound Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 medium Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 2 medium Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 6 cups Fresh spinach leaves
  • 1 teaspoon Dried Italian seasoning
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Heat the olive oil and butter in a large soup pot over medium heat.

Step 2

Season the chicken breasts with salt and black pepper. Add the chicken breasts to the pot and cook for 4-5 minutes per side, until browned and mostly cooked through. Remove the chicken and set it aside to cool slightly.

Step 3

Add the diced yellow onion to the pot and saute for 3-4 minutes, until softened and translucent.

Mix in the minced garlic, diced carrots, and diced celery. Cook for another 5 minutes, stirring occasionally, until the vegetables are slightly tender.
