  • 1.5 cups Mozzarella cheese, shredded
  • 0.5 cup Panko breadcrumbs
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Paprika

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper and sear for 4-5 minutes on each side until golden but not fully cooked. Remove and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil and minced garlic. Sauté for 30 seconds until fragrant, then add the fresh spinach and cook until wilted, about 2-3 minutes. Set the spinach aside.
