Ingredients

  • 4 pieces Chicken breasts (boneless, skinless)
  • 1 cup Pecans or walnuts (finely chopped)
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup Parmesan cheese (finely grated)
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper (freshly ground)
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Garlic powder
  • 3 tablespoons Olive oil or butter
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Step 2

Place chicken breasts between two pieces of plastic wrap or parchment paper and pound them gently with a mallet until they are even in thickness, about 1/2 inch thick.

Step 3

In a shallow bowl, combine the chopped pecans or walnuts, panko breadcrumbs, Parmesan cheese, paprika, garlic powder, salt, and pepper. Mix well to form the crust mixture.

Step 4

Set up a breading station: Place flour in one shallow bowl, whisk together eggs and milk in a second shallow bowl, and prepare the crust mixture in a third shallow bowl.

Step 5

Dredge each chicken breast in the flour, coating it evenly and shaking off any excess. Next, dip the chicken into the egg mixture, ensuring it's fully coated. Finally, press the chicken into the crust mixture, patting it down to adhere the coating evenly on both sides.

Step 6

Heat olive oil or butter in a large oven-safe skillet over medium heat. Add the crusted chicken filets and sear for 2-3 minutes on each side until golden brown.

Step 7

Transfer the skillet to the preheated oven and bake for 12-15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Step 8

Remove the chicken from the oven and let it rest for 5 minutes before serving.

Step 9

Serve the chicken with lemon wedges on the side for a fresh, tangy finish. Pair with a green salad or roasted vegetables for a complete meal.
