Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 packet taco seasoning
  • 2 cups cooked white or brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 2 cups shredded Mexican blend cheese
  • 1 cup sour cream
  • 2 tablespoons chopped fresh cilantro
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with a little olive oil or cooking spray and set aside.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and sprinkle both sides evenly with the taco seasoning. Cook the chicken until fully cooked, about 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it rest for a few minutes, then shred it into bite-sized pieces using two forks.

Step 3

In a large mixing bowl, combine the cooked rice, black beans, corn, diced tomatoes with green chilies (undrained), shredded chicken, and half of the shredded Mexican blend cheese. Stir in the sour cream, salt, and black pepper until well combined.

Step 4

Transfer the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining shredded cheese over the top.

Step 5

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 6

Once baked, remove the casserole from the oven and let it rest for 5 minutes. Garnish with freshly chopped cilantro for a burst of fresh flavor.

Step 7

Serve the Chicken Fiesta Casserole warm, garnished with optional toppings like extra sour cream, sliced jalapeños, or diced avocado. Enjoy!
