Ingredients

  • 2 pieces baguette
  • 2 pieces boneless skinless chicken breasts
  • 150 grams feta cheese
  • 1 medium red bell pepper
  • 1 small red onion
  • 2 cups baby spinach
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Slice the baguettes in half lengthwise and scoop out some of the inner bread to create a well for the filling. Set aside.

Step 3

Season the chicken breasts with oregano, salt, and black pepper on both sides.

Step 4

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the chicken breasts for 5-6 minutes on each side until fully cooked and golden brown. Remove from the pan and let rest for 5 minutes before slicing them into thin strips.

While the chicken is resting, dice the red bell pepper and finely chop the red onion and garlic cloves.
