Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 cup Orzo pasta
  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 0.5 medium Red onion
  • 0.75 cup Feta cheese
  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh basil
  • 3 tablespoons Lemon juice
  • 4 tablespoons Extra-virgin olive oil
  • 2 cloves Garlic cloves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Dried oregano

Directions

Step 1

Cook the orzo according to package instructions until al dente. Drain, rinse with cold water, and set aside to cool.

Step 2

Season the chicken breasts with a pinch of salt, black pepper, and dried oregano on both sides.

Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes per side, or until fully cooked and golden brown. Remove from the skillet and let rest for 5 minutes before slicing into bite-sized pieces.
