  • 2 liters water
  • 100 ml soy sauce

  • 3 tablespoons black bean garlic sauce

  • 2 tablespoons sesame oil
  • 1 inch piece, smashed ginger
  • 2 smashed garlic cloves
  • 2 pieces star anise
  • 1 stick cinnamon stick
  • 1 teaspoon Sichuan peppercorns
  • 2 stalks green onions
  • 500 ml vegetable oil

Directions

Step 1

Trim any rough tips from the chicken feet and cut off the nails using kitchen scissors.

Step 2

Bring 2 liters of water to a boil in a large pot and blanch the chicken feet for 3 minutes.

Drain immediately, then rinse the chicken feet under cold water to stop cooking.

In a large, deep pan, heat 500 ml of vegetable oil until hot. Fry the chicken feet in batches until they become golden brown, about 3-5 minutes per batch. Be cautious as the oil might splatter.
