Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 Red bell pepper
  • 1 Green bell pepper
  • 1 Yellow bell pepper
  • 1 Yellow onion
  • 2 tbsp Olive oil
  • 1 Lime
  • 2 Garlic cloves, minced
  • 1 tsp Chili powder
  • 1 tsp Paprika
  • 1 tsp Ground cumin
  • 0.5 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh cilantro, chopped

Directions

Step 1

Slice the chicken breasts into thin strips and place them in a bowl.

Step 2

In a small bowl, combine the chili powder, paprika, cumin, dried oregano, salt, and black pepper to create the fajita seasoning mix.

Step 3

Sprinkle the fajita seasoning over the chicken strips and mix well to coat evenly. Set aside.

Step 4

Slice the red, green, and yellow bell peppers into thin strips. Cut the onion in half and slice it into thin wedges.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
