Ingredients

  • 1 medium, thinly sliced Red bell pepper

  • 1 teaspoon Smoked paprika
  • 1.5 teaspoons Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 0.5 cup Shredded cheddar cheese
  • 4 Burger buns
  • 0.5 cup Guacamole
  • 0.25 cup Sour cream
  • 2 tablespoons, chopped Fresh cilantro (optional)

Directions

Step 1

In a small bowl, combine garlic powder, smoked paprika, ground cumin, chili powder, salt, and black pepper to create the fajita seasoning mix.

Step 2

In a large mixing bowl, add the ground chicken and half of the prepared fajita seasoning mix. Mix until well combined.

Step 3

Divide the ground chicken mixture into 4 equal portions and shape them into burger patties. Set aside.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced red bell pepper, green bell pepper, and onion to the skillet. Sprinkle the remaining fajita seasoning mix over the vegetables and cook, stirring occasionally, for 6-8 minutes or until softened and slightly caramelized. Transfer the vegetables to a plate and keep them warm.

Step 5
