Ingredients

  • 2 cups Cooked, shredded chicken breast
  • 8 pieces Low-carb tortillas
  • 1 cup Reduced-fat Mexican blend cheese
  • 1 cup Plain, non-fat Greek yogurt
  • 1 cup Salsa (low-sugar or homemade)
  • 4 ounces Canned green chilies (diced)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 spray Olive oil spray
  • 2 tablespoons Fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly spray a 9x13-inch baking dish with olive oil spray.

Step 2

In a large bowl, combine the shredded chicken, half of the shredded cheese, green chilies, garlic powder, chili powder, and ground cumin. Mix until evenly combined.

Step 3

Lay one tortilla flat on a clean surface. Spoon approximately 1/4 cup of the chicken mixture down the center of the tortilla, then roll it tightly. Place seam-side down in the prepared baking dish. Repeat for all tortillas.

Step 4

In a separate bowl, whisk together the Greek yogurt and salsa until smooth. Pour this mixture evenly over the enchiladas in the baking dish, ensuring all are coated.

Step 5

Sprinkle the remaining shredded cheese over the top.

Step 6

Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 7

Remove the dish from the oven and let cool for 5 minutes. Garnish with chopped fresh cilantro, if desired, before serving.
