  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 pieces Garlic cloves, minced
  • 1 4-ounce can Diced green chiles
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Enchilada sauce
  • 0.5 cup Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 8 pieces Flour tortillas
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Place the chicken breasts in a pot of boiling water. Cook for 15–20 minutes, or until fully cooked. Remove from the pot and shred using two forks. Set aside.

Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3–4 minutes, until softened. Add minced garlic and cook for an additional minute.

Stir in diced green chiles, paprika, ground cumin, chili powder, salt, and black pepper. Cook for 1–2 minutes to combine the flavors.
