Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 medium Red onion, diced
  • 4.5 ounces Canned green chilies
  • 2 cups Enchilada sauce
  • 8 pieces Flour tortillas
  • 2 cups Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 0.25 cup Fresh cilantro, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rub the chicken breasts with 1 tablespoon of olive oil, salt, pepper, garlic powder, and onion powder.

Step 3

In a large skillet over medium heat, add 1 tablespoon of olive oil. Cook the chicken breasts for 6-7 minutes on each side until fully cooked and no longer pink inside.

Remove chicken from the skillet and let it rest for 5 minutes, then shred it using two forks.
