  • 3 medium Carrots, peeled and sliced
  • 3 stalks Celery stalks, sliced
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 6 cups Chicken broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Salt (for dumplings)
  • 4 tablespoons Unsalted butter, cold and cubed
  • 1 cup Whole milk
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Place the boneless, skinless chicken thighs in the bottom of a large slow cooker.

Step 2

Add the sliced carrots, celery, diced onion, and minced garlic on top of the chicken.

Step 3

Pour the chicken broth over the ingredients in the slow cooker.

Step 4

Sprinkle in the dried thyme, dried parsley, salt, black pepper, and add the bay leaf.

Step 5

Cover the slow cooker and cook on LOW for 5 hours or until the chicken is tender and easily shredded.

Step 6

Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Discard the bay leaf. Return the shredded chicken to the slow cooker and mix well.

Step 7

In a mixing bowl, combine the all-purpose flour, baking powder, and salt for the dumplings. Whisk to combine.

Step 8

Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 9

Stir in the whole milk gradually until a soft dough forms.

Step 10

Drop spoonfuls of the dumpling dough over the top of the chicken mixture in the slow cooker. Make sure the dumplings are evenly spaced apart.

Step 11

Cover the slow cooker and cook on HIGH for 1 hour or until the dumplings are cooked through and fluffy.

Step 12

Gently stir the chicken and dumplings to ensure even distribution.

Step 13

Serve hot, garnished with fresh chopped parsley if desired. Enjoy!
