  • 2 small chicken breasts (boneless, skinless)
  • 2 cups broccoli florets

  • 1.5 cups cheddar cheese (shredded)
  • 0.25 cups Parmesan cheese (grated)

  • 0.25 teaspoons black pepper
  • 0.25 cups breadcrumbs (panko or regular)
  • 1 teaspoons olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a small baking dish (8x8 inches) or similar size.

Bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green but still firm. Drain and set aside.

Season the chicken breasts lightly with salt and pepper. Heat a skillet over medium heat and cook the chicken breasts for 4-5 minutes per side until golden and cooked through. Remove from the skillet and slice into bite-sized pieces.

In the same skillet, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
