Ingredients

  • 500 grams Chicken breast
  • 1 medium, diced Onion
  • 1 medium, diced Green bell pepper
  • 1 medium, diced Tomato
  • 50 grams, sliced Black olives
  • 50 grams Raisins
  • 400 grams Gouda cheese
  • 30 grams Butter
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 0.5 teaspoons Nutmeg
  • 100 milliliters Chicken broth
  • 20 grams Bread crumbs

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

Bring a pot of water to a boil, add chicken breasts, and cook for 10-12 minutes, or until fully cooked. Remove, cool slightly, and shred the chicken using two forks.

Step 3

In a large saucepan, melt the butter over medium heat. Add diced onion and green bell pepper. Sauté for 3-4 minutes until softened.

Step 4

Stir in the diced tomato, sliced black olives, and raisins. Continue cooking for another 2 minutes.

Step 5

Add the shredded chicken to the saucepan. Season with salt, black pepper, paprika, and nutmeg. Stir until everything is evenly combined.

Step 6

Pour in the chicken broth to keep the mixture moist. Cook for another 3-4 minutes, then remove from heat.

Step 7

In a greased baking dish, layer thin slices of Gouda cheese on the bottom and sides, ensuring the cheese slightly overlaps. Reserve some cheese slices to cover the dish later.

Step 8

Pour the chicken filling into the cheese-lined dish, spreading it evenly.

Step 9

Cover the top with the reserved Gouda cheese slices, sealing the filling completely.

Step 10

Sprinkle bread crumbs evenly on top of the cheese for a crispy finish.

Step 11

Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and golden brown on top.

Step 12

Let the Keshi Yena cool for 5-10 minutes before serving. Cut into slices and enjoy this rich, cheesy dish!
