  • 500 grams Boneless, skinless chicken breasts
  • 1 medium Yellow onion, diced
  • 2 medium Carrots, diced
  • 1 cup Frozen peas
  • 2 Garlic cloves, minced
  • 1 cup Chicken stock
  • 0.5 cup Heavy cream
  • 2 tablespoons Dijon mustard
  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Russet potatoes, peeled and cubed
  • 0.25 cup Milk
  • 0.25 cup Grated Parmesan cheese
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large pot of salted boiling water, cook the potatoes until tender, about 15-20 minutes. Drain, then mash with butter, milk, Parmesan, and a pinch of salt and pepper. Set aside.
