Ingredients

  • 6 pieces Chicken thighs (bone-in, skinless)
  • 400 ml Coconut milk
  • 1 large Onion (finely chopped)
  • 4 cloves Garlic (minced)
  • 1 tbsp Ginger (grated)
  • 2 medium Tomatoes (chopped)
  • 1 tsp Turmeric powder
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Paprika
  • 0.5 tsp Crushed red chili flakes (optional)
  • 2 tbsp Vegetable oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh cilantro (chopped, for garnish)
  • 150 ml Water

Directions

Step 1

Heat the vegetable oil in a large skillet or pot over medium heat.

Step 2

Add the onions and sauté for 5-7 minutes until soft and translucent.

Step 3

Stir in the garlic and ginger and cook for 1-2 minutes until fragrant.

Step 4

Add the chopped tomatoes and cook for 3-4 minutes until they break down into a sauce.

Step 5

Stir in the turmeric, cumin, coriander, paprika, and crushed red chili flakes (if using). Cook the spices for 1 minute to toast them.
