Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 4 cloves Garlic cloves (minced)
  • 2 teaspoons Paprika
  • 1 teaspoon Dried thyme
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 cup Chicken broth
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 Lemon (juiced and zested)

Directions

Step 1

Pat the chicken thighs dry with paper towels and season them generously on both sides with 1 teaspoon of salt, 1 teaspoon of paprika, and the black pepper.

Step 2

In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, carefully place the chicken thighs skin-side down and cook for 5–7 minutes until the skin is golden brown and crispy. Flip and cook the other side for an additional 3 minutes. Remove the chicken from the skillet and set aside.

Step 3

Reduce the heat to medium and add another tablespoon of olive oil along with the butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the remaining paprika and thyme to the skillet and stir well. Immediately pour in the chicken broth and bring the mixture to a simmer, scraping any browned bits from the bottom of the skillet.

Step 5

Return the chicken thighs to the skillet, skin-side up, along with any juices that accumulated on the plate. Cover and reduce the heat to low. Let the chicken cook for 20 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6

Remove the skillet from the heat and stir in the lemon juice, lemon zest, and chopped parsley. Taste the sauce and adjust seasoning with the remaining 0.5 teaspoon of salt if needed.

Step 7

Plate the chicken thighs and spoon the sauce over the top. Serve immediately with your choice of sides, such as mashed potatoes, rice, or crusty bread to soak up the sauce.
