  • 1 cup Breadcrumbs (panko recommended)
  • 0.25 cup Grated Parmesan cheese
  • 4 tablespoons Unsalted butter
  • 3 tablespoons Olive oil
  • 1 clove Garlic (minced)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Lemon zest
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Place the chicken breasts on a cutting board and slice each breast in half horizontally to create four thinner cutlets. Use a meat mallet to gently pound the cutlets until they are an even thickness, about 1/4 inch thick. Season both sides with salt and pepper.

Step 2

Set up a breading station with three shallow dishes. In the first dish, add the flour. In the second dish, beat the eggs. In the third dish, combine the breadcrumbs and Parmesan cheese.
