Ingredients

  • 1 kilogram Chicken (cut into serving pieces)
  • 2 pieces Potatoes (peeled and cubed)
  • 1 piece Carrot (peeled and sliced)
  • 2 pieces Bell peppers (red and green, sliced)
  • 400 milliliters Coconut milk
  • 2 tablespoons Curry powder
  • 4 cloves Garlic (minced)
  • 1 piece Onion (chopped)
  • 1 tablespoon Ginger (grated)
  • 1 tablespoon Fish sauce
  • 3 tablespoons Vegetable oil
  • 1 cup Water or chicken stock
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper

Directions

Step 1

Heat the vegetable oil in a large pot or deep skillet over medium heat.

Step 2

Sauté the garlic, onion, and ginger until fragrant and the onions are translucent.

Add the chicken pieces to the pot and cook until lightly browned on all sides.
