Ingredients

  • 2 pieces (boneless, skinless) Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 1 tablespoon Olive oil
  • 2 whole loaves (or 4 sandwich-sized portions) Crusty panini bread
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Mayonnaise
  • 4 slices Ham
  • 4 slices Swiss cheese
  • 2 tablespoons (softened) Butter
  • 0.5 cup Arugula (optional)

Directions

Step 1

Preheat a grill pan or panini press to medium-high heat.

Step 2

Season the chicken breasts with salt, black pepper, and paprika on both sides.

Step 3

Heat the olive oil in a skillet over medium heat. Cook the chicken breasts for 5-6 minutes per side, or until completely cooked through and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes, then slice into thin strips.

Step 4

While the chicken is cooking, mix the Dijon mustard and mayonnaise together in a small bowl to create a creamy spread.

Step 5

Cut the panini bread in half and spread a thin layer of the Dijon mayonnaise mixture on the inside of each half.

Step 6

On the bottom slice of each sandwich, layer 1 slice of Swiss cheese, 1 slice of ham, a portion of the sliced chicken, and another slice of Swiss cheese. If using, add a small handful of arugula on top, then close the sandwich with the top slice of bread.

Lightly butter the outside of each sandwich on both the top and bottom.

Place the assembled sandwiches onto the preheated grill pan or panini press. Cook for 3-4 minutes per side (or according to your panini press instructions), until the outside is golden and crispy and the cheese is melted.

Remove the panini from the heat, let cool for 1-2 minutes, then slice in half diagonally and serve immediately.
