Ingredients

  • 4 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 minced Garlic cloves
  • 1 medium, diced Onion
  • 2 medium, sliced Carrots
  • 1 cup, sliced Mushrooms
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 1 teaspoon Dried thyme
  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 1 cup, grated Parmesan cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.

Step 3

Add the chicken breasts and cook for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 4

Reduce heat to medium-low and add the remaining butter to the skillet. Sauté the garlic, onions, and carrots for 3-4 minutes until the onions become translucent.

Step 5

Add the mushrooms and cook for another 2-3 minutes until softened.

Step 6

Pour in the chicken broth, scraping the bottom of the skillet to deglaze and incorporate any browned bits.

Step 7

Stir in the heavy cream, thyme, and a pinch of salt and black pepper. Mix well.

Step 8

Return the chicken breasts to the skillet, ensuring they are partially submerged in the sauce.

Step 9

Reduce heat to low, cover the skillet, and simmer for 20 minutes, turning the chicken halfway through for even cooking.

Step 10

Sprinkle the grated Parmesan cheese over the chicken and sauce. Cover again and cook for an additional 5 minutes until the cheese has melted and the sauce has slightly thickened.

Step 11

Garnish with fresh parsley before serving.

Step 12

Serve hot with steamed rice, mashed potatoes, or crusty bread for a complete meal.
