  • 1 can (15 ounces) Black beans, rinsed and drained
  • 1 cup Frozen corn
  • 8 ounces Cream cheese, softened and cubed
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped (optional)
  • 4 pieces Lime wedges, for serving (optional)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook for about 4-5 minutes per side until golden brown. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
