Ingredients

  • 500 grams boneless, skinless chicken breast
  • 400 ml coconut milk
  • 500 ml chicken broth
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon fresh ginger
  • 1 piece lemongrass stalk
  • 5 leaves kefir lime leaves
  • 1 large red chili
  • 200 grams mushrooms
  • 3 stalks green onions
  • 2 tablespoons coriander leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Cut the chicken breast into thin slices and set aside.

Step 2

Peel and thinly slice the ginger. Trim and bruise the lemongrass to release its fragrance.

Step 3

Thinly slice the mushrooms, green onions, and red chili. Set these aside for later use.

Step 4

In a large pot, combine the chicken broth and coconut milk. Add the ginger slices, lemongrass, and kefir lime leaves to the pot and bring to a simmer over medium heat.

Step 5

Once simmering, add the chicken slices to the pot. Cook for about 10 minutes, or until the chicken is cooked through.

Stir in the fish sauce, lime juice, and salt. Add the sliced mushrooms and cook for an additional 5-7 minutes, until mushrooms are tender.
