Ingredients

  • 500 g Chicken breast
  • 200 ml Coconut milk
  • 2 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 1 tsp Ground turmeric
  • 1 tsp Ground cumin
  • 2 pcs Garlic cloves, minced
  • 1 tsp Ginger, grated
  • 1 tbsp Lime juice
  • 8 pcs Wooden skewers, soaked
  • 4 tbsp Creamy peanut butter
  • 1 tsp Chili paste (optional)
  • 3 tbsp Warm water
  • 2 tbsp Chopped peanuts (for garnish)
  • 1 tbsp Fresh cilantro (for garnish)

Directions

Step 1

Cut the chicken breast into thin strips, approximately 1-inch wide, and set aside.

Step 2

In a mixing bowl, combine the coconut milk, soy sauce, brown sugar, turmeric, cumin, minced garlic, grated ginger, and lime juice. Mix well to create the marinade.

Step 3

Add the chicken strips to the bowl and toss until evenly coated. Cover and marinate in the refrigerator for at least 1 hour, or up to overnight for best flavor.

While the chicken marinates, soak the wooden skewers in water to prevent them from burning during grilling.

Once marinated, thread the chicken strips onto the soaked skewers, weaving the strips back and forth along the skewer.
