  • 2 cups cooked chicken breast, shredded or diced
  • 0.5 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 whole green onions, thinly sliced
  • 1 tablespoon fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and dry them thoroughly. Poke several holes in each potato with a fork to allow steam to escape during baking.

Step 2

Rub the potatoes all over with olive oil and season generously with salt and a sprinkle of pepper. Place the potatoes directly on the oven rack or on a baking sheet.
