Ingredients

  • 3 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 teaspoon Salt
  • 2 tablespoons Vegetable oil
  • 1 cup Warm water
  • 1 pound Chicken breast
  • 8 ounces Mexican chorizo
  • 1 whole Small onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 cup Black beans, drained and rinsed
  • 1 cup Shredded cheddar cheese
  • 4 cups Vegetable oil (for frying)
  • 0.5 cup Sour cream (for garnish)
  • 0.25 cup Fresh cilantro, chopped (optional)

Directions

Step 1

In a large mixing bowl, combine flour, baking powder, and salt. Stir in the vegetable oil and warm water until the dough comes together.

Step 2

Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Cover with a damp cloth and let rest for 20 minutes.

Step 3

While the dough rests, prepare the filling. Heat a skillet over medium heat and cook the chorizo until browned, about 5-7 minutes. Remove from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Sauté until softened, about 3 minutes.

Dice the chicken breast into small pieces and add to the skillet. Season with cumin, chili powder, and salt. Cook until the chicken is fully cooked, about 6-8 minutes.

Heat the vegetable oil in a large pot or deep skillet to 375°F (190°C). Carefully fry each dough circle one at a time for about 1-2 minutes per side until puffed and golden brown. Remove each sopaipilla and drain on paper towels.

Step 9

Using a sharp knife, make a small slit in each sopaipilla and gently stuff with the chicken and chorizo filling.

Step 10

Serve immediately, garnished with sour cream and chopped cilantro, if desired.
