Ingredients

  • 500 g Boneless skinless chicken thighs
  • 250 g Chorizo sausage
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 1 Red onion
  • 2 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Lemon juice
  • 8 Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Step 2

Cut the chicken thighs into bite-sized pieces, approximately 2.5 cm (1 inch) cubes.

Step 3

Slice the chorizo sausage into 1 cm (0.5 inch) thick rounds.

Step 4

Deseed and cut the red and yellow bell peppers into chunks similar in size to the chicken pieces.

Step 5

Peel and cut the red onion into wedges and separate the layers.

Step 6

In a large bowl, combine the olive oil, smoked paprika, garlic powder, dried oregano, salt, black pepper, and lemon juice, then mix well.

Add the chicken pieces to the bowl and toss to coat evenly in the marinade. Let it sit for 10-15 minutes while you prepare the vegetables and chorizo.
