  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Turmeric powder
  • 1 liter Chicken stock
  • 1 leaf Bay leaf
  • 100 grams Walnuts, finely ground
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 200 grams Cooked orzo or couscous (optional, for serving)
  • 4 wedges Lemon wedges (optional, for serving)

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 3

Add the diced onion and cook for 3-4 minutes until translucent.

Stir in the minced garlic, diced carrots, and celery, and cook for another 4-5 minutes until the vegetables begin to soften.
