Ingredients

  • 3 cups Rotisserie chicken (shredded)
  • 1 cup Green chiles (roasted and diced, canned or fresh)
  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 12 pieces Corn tortillas
  • 2 cups Enchilada sauce (green or red, your choice)
  • 2 tablespoons Olive oil
  • 1 medium White onion (finely diced)
  • 2 Garlic cloves (minced)
  • 0.25 cup Fresh cilantro (chopped, optional for garnish)
  • 1 cup Sour cream (optional for serving)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute, until fragrant.

Stir the shredded chicken, roasted chiles, salt, and pepper into the skillet. Mix well, then remove from heat. Let the mixture cool slightly.
