Ingredients

  • 1 15-oz can Canned chickpeas, rinsed and drained
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.25 cup Red onion, thinly sliced
  • 0.25 cup Fresh parsley, chopped
  • 2 tablespoons Fresh mint, chopped
  • 3 tablespoons Lemon juice
  • 2 tablespoons Extra-virgin olive oil
  • 1 teaspoon Honey
  • 0.5 teaspoon Ground cumin

Directions

Step 1

Preheat a skillet over medium-high heat and add 2 tablespoons of olive oil.

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.
