Ingredients

  • 4 medium potatoes
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup (cooked and shredded) chicken breast
  • 4 slices (cooked and crumbled) bacon
  • 1 cup (shredded) cheddar cheese
  • 2 tablespoons (chopped) scallions
  • 2 large egg
  • 1 cup all-purpose flour
  • 2 cups breadcrumbs
  • 4 cups (for frying) vegetable oil

Directions

Step 1

Peel and dice the potatoes. Boil them in salted water until soft, about 10-12 minutes. Drain and mash the potatoes with butter, salt, and black pepper. Allow to cool slightly.

Step 2

In a large mixing bowl, combine the mashed potatoes with shredded chicken, crumbled bacon, cheddar cheese, and chopped scallions. Mix until evenly incorporated.
