  • 1.5 cups shredded cheddar cheese
  • 2 cups frozen mixed vegetables
  • 3 cups white rice, cooked
  • 1 cup panko breadcrumbs
  • 0.5 cups parmesan cheese, grated
  • 1 teaspoon dried parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Heat the olive oil in a large skillet over medium heat and cook the chicken for about 4-5 minutes per side until golden brown. Remove from skillet, let rest for 5 minutes, and then shred into bite-sized pieces.
