Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Fresh lime juice
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves, minced
  • 1 teaspoon Ginger, fresh and finely grated
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground allspice
  • 0.5 teaspoon Ground cayenne pepper
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped
  • 0.5 cup Pineapple chunks, fresh or canned
  • 1 cup Coconut rice (optional, for serving)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap or parchment paper and gently pound them to an even thickness using a meat mallet or rolling pin. This ensures even cooking.

Step 2

In a medium bowl, whisk together lime juice, olive oil, minced garlic, grated ginger, brown sugar, allspice, cayenne pepper, cinnamon, salt, and black pepper. This is your marinade.

Step 3

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Make sure the chicken is fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

Step 4

Heat a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade (discarding the marinade) and cook the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).

Step 5

While the chicken cooks, lightly grill or sauté the pineapple chunks until they are slightly caramelized and golden brown, about 2-3 minutes per side.

Step 6

Remove the chicken from the pan and let it rest for 5 minutes. Sprinkle with chopped fresh cilantro for a pop of color and flavor.

Step 7

Serve the chicken alongside the caramelized pineapple chunks. You can pair it with coconut rice for a complete Caribbean-inspired meal.
