Ingredients

  • 4 cloves Garlic (minced)
  • 2 medium Bell peppers (sliced, mixed colors)
  • 8 oz Cremini mushrooms (sliced)
  • 28 oz Crushed tomatoes
  • 0.5 cup Dry white wine
  • 0.5 cup Chicken broth (low sodium)
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 tsp Fresh rosemary (chopped)
  • 0.25 tsp Red chili flakes (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped, for garnish)

Directions

Step 1

Drain and rinse the shirataki noodles under cold water. Set aside.

Step 2

Season the chicken thighs with salt and pepper on both sides.

Step 3

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Sear the chicken thighs for 3-4 minutes on each side until golden brown. Remove and set aside.
